“A dark roast that secedes where others fail.” This coffee was created and is roasted in the independent spirit of the Florida Keys and named after the historic events of 1982. 

The unofficial “Conch Republic” was born on April 23, 1982, in response to an ongoing Border Patrol blockade of US 1. After repeated complaints went unanswered, a group of Key West's citizens organized a mock succession in protest. Key West's Mayor Dennis Wardlow was proclaimed prime minister of a new republic (the Conch Republic), which immediately declared war against the United States (symbolically breaking a loaf of stale Cuban bread over the head of a man dressed in a naval uniform). After just one minute, they quickly surrendered (to the man in the uniform) and then applied for one billion dollars in foreign aid.
 
The stunt worked! The roadblock was quietly removed, and the historic Conch Republic was born (no foreign aid was ever received). The name stuck and has been embraced up and down the Keys - including our Conch Republic roast, which "secedes where other dark roasts fail."

the BEST coffee

We visited Baby's in 2022 and have NOT STOPPED ORDERING beans to have them delivered to our house since 2022. Truly our favorite coffee we've ever had. Order beans if you don't live nearby or can't visit. You will not be disappointed!

Rich flavor

Best Coffee in the Keys

This coffee is always worth the trip down to the Keys. Beans are roasted fresh all the time and the flavor is smooth. Good Luck and all the best to the new owners, so happy that they are keeping the tradition alive.
